12 oz. semi sweet shocolate, chopped 12 oz. or 1 1/2 cup butter 1/3 cup water 11 egg whites 3/4 tsp salt 11 egg yolks 1 2/3 cup sugar |
1. Preheat oven to 350 degrees
2. Melt chocolate in a sauce pan with butter and water. Remove from heat.
3. Whip egg whites and salt to a stiff peak
4. Whip egg yolks and sugar together until sugar dissolves and mixture is a lemon color.
5. Slowly add chocolate mixture to egg yolks, mix well; then fold in egg whites.
6. Coat two 9 or 10" spring form pans with butter and dust with flour
7. Divide batter into two pans.
8. Bake cakes for 20 minutes or until center is set.
Allow cakes to cool before topping with whipped cream.
